We all know that we should eat more vegetables but sometimes that’s hard. This salad makes it easy and it’s tasty.
Ingredients:
- 5-6 large carrots, finely grated (about 4 cups grated) 
- 1 shallot, thinly sliced 
- 1/2 cup parsley, chopped 
- 1/3 cup raisins 
- juice of 2 lemons (~1/3 cup) 
- 1/4 cup olive oil 
- 1 teaspoon salt 
- 1/2 teaspoon garlic powder 
- 1/4 teaspoon cumin 
- 1/4 teaspoon coriander 
- pinch of cayenne pepper (~1/8 teaspoon) 
- pinch of black pepper
